As a green vegetable Lauki (bottle gourd) has great nutritious value. However Lauki ( bottle gourd) is not amongst the vegetables that kids really enjoy. But this Lauki ice cream will sure to win your kids heart. Your kids will surely love this Lauki ice cream. It's a very tasty and nobody will be able to recognise that it is made with Lauki ( bottle gourd) until you tell the secret. It's a must try dessert and I am sure it will become your and your kids favourite.
Ingredients to make Lauki, doodhi ( bottle gourd)) ice cream
500 or 2 cup grated Lauki
2 litre milk
2/3 or ¼ cup sugar
1 tsp cardamom powder
Honey ( optional)
Sprinklers, nuts to garnish
Method to make Lauki ice cream:-
1. Peel and grate Lauki ( bottle gourd)
2. In a pan add 2 tsp water at the bottom than Add 2 litre milk and grated Lauki
3. Switch on the flame and Bring milk and Lauki mixture to a boil and than lower the flame and cook it on sim flame until milk and Lauki mixture reduced to approximately half the quantity. ( keep stirring in between)
4. Once milk and Lauki reduced to half add sugar and cardamom powder and again increase the flame and bring a boil in the mixture.
5. Once it comes to a boil switch off the flame.
6. Take Lauki milk mixture off the flame and let it cool
7. Once cool put it in a mixie jar and blend it into a smooth consistency
8. Pour the mixture in an ice cream tin/ jar/ mould.
9. Keep it In the freezer to freeze for atleast 3-4 hours. Or until it is completely set.
10. Once set take it out and serve this Lauki ice cream
