5 EASY Instant Pot Chicken Dinners & SHOPPING LIST Video
For all of you who aren’t using your instant pot, I have FIVE Instant Pot chicken recipes that are EASY to make, taste excellent, and offer a LOT of variety! You could eat all of these in one week and no one would know you’re doing instant pot meals every night!

Shopping List (SERVES 8)
4 quarts chicken broth
About 10 chicken breasts (about 2 per meal)
1 cup onion (1 small onion)
1 cup carrots (1.5-2 carrots)
1 cup celery (2-6 stocks, depending on size)
2 cups fresh spinach
1 cup parmesan cheese
8 slices of provolone cheese (or your favorite cheese)
1 cup shredded mexican blend cheese
1 pound Gnocchi
1 pint (2 cups) heavy cream
1 1/2 cups whole milk (or heavy cream)
16 oz box fettuccine pasta
8 oz chinese noodles (or thin spaghetti noodles)
1 can black beans
1 can corn (or frozen corn)
1 cup salsa
1 small can chopped green chiles
1 cup rice
Taco Seasoning (1 package or 3 TBS)
Au Jus Seasoning (1 package)
Ranch Seasoning (1 package or 3 TBS)
salt and pepper
Ground ginger
Dried minced garlic
5 cloves minced garlic
Garlic powder
Olive oil/avocado oil
Cornstarch
Flour
Sesame oil (or sesame seed oil)
8 hoagie buns
Optional:
Fresh parsley
Fresh cilantro
Broccoli
Sour Cream

INSTANT POT Chicken Lo Mein

Mississippi Chicken Sandwiches
Serves 8
1.5-2 pounds boneless skinless chicken breasts
1 cup chicken broth
1 package au jus seasoning
1 package ranch seasoning (or 3 tablespoons)
Pepperoncini peppers (6-8ish)
8 hoagie rolls
8 slices of provolone cheese
Place chicken, broth and all seasonings in the instant pot.
Seal and cook on high pressure for 30 minutes (frozen chicken) or 15-20 minutes (thawed chicken).
Slow release (or quick release) and shred chicken. Remove pepperoncinis if desired.
Return to instant pot and mix with juices and pepperoncinis.
Serve on toasted hoagie buns and provolone cheese slices.
Chicken Burrito Bowls (or Tacos)
Serves 6-8
1 pound boneless skinless chicken breasts, cut into 1-inch chunks
1 package of taco seasoning (or 3 tablespoons of homemade taco seasoning: https://fabulesslyfrugal.com/recipes/homemade-taco-seasoning-recipe/?utm_source=youtube)
1 cup chicken broth
1 can corn, drained (or about a cup or so of frozen corn)
1 can black beans, drained and rinsed
1 cup salsa
1 small can chopped green chilies
1 cup rice
1 cup shredded Mexican blend cheese
Add cubed chicken, seasoning, chicken broth - stir to combine
Add in corn, black beans, green chilies and rice.
Top with salsa and cook on high pressure for 10 minutes
Quick release, stir to combine. Then add 1 cup of cheese, stir until melted.
Serve in a bowl or inside a tortilla and top with sour cream, avocados, cilantro, and anything else you love!
