Rajgira/ Amaranth Ladoo Recipe | How to make Ramdana / Cholai Laddu | Healthy Snack Video
Amaranth the super grain is called by many names in India. In most part of Country, it's called Ramdana meaning god's seed or Rajgira that means royal seed. Today I am sharing one very simple recipe of these seeds, rajgira ladoo also called Cholai ke ladoo. These laddu's are light and healthy snacks and can be eaten during fasts/ upvas.
Ingredients to make ramdana/rajgira Ladoo( royal grain / amaranth):-
1/2 Cup rajgira / ramdana
1/3 Cup jaggery/ gur
1/2 Cup Almonds/ badam
10-12 Black current or raisins
Method to make ramdana/rajgira Ladoo( royal grain / amaranth):-
Heat up a pan or kadai with a heavy base, once it is nicely warmed up, start roasting the rajgira in small batches of 1 tbsp at a time. Keep stirring, until they puff up well. This will take few seconds ( make sure the pan is moderately hot but not at a very high temperature or very low).
sieve roasted rajgira through a large sifter and keep the puffed rajgira in a large bowl.
Dry Roast Almonds In a pan till they turn slightly dark brown. Once cool, chop them in small pieces.
To make jaggery syrup...In the same pan pour 2 tsp of water and add jaggery and melt it on low to medium heat.. keep stirring occasionally.
Add the melted jaggery and Almonds to the puffed rajgira and mix everything very well.
Let the jaggery cool down slightly, than use hands to make ladoo from the mixture. Place a black current or raisins at the centre and make small round ladoo.
These ladoo can be eaten during upvas or fasting during Navratri
